Koolchas: Delhi based mother-son duo turns street food 'Chole Khulcha' into a successful restaurant venture

Delhi's Architect turned Restaurateur Gaurav Bahl tapped on people's emotions and launched his start-up 'Koolchas' in 2018.

For some Chole Kulcha is not just food but an emotion. The white, hot, fluffy bread topped with melting butter and served with yummy chole, pickle, spicy chutney, and onion is a heavenly dish. Delhi's Architect turned Restaurateur Gaurav Bahl tapped on people's emotions and launched his start-up 'Koolchas' in 2018. 

Gaurav had been a part of real estate for about 20 years. He got into the hospitality industry after sensing a slowdown in the real estate business. Sunila Bahl, Gaurav's mother, the backbone of "Koolchas' helped him with the menu, introducing new recipes, selecting ingredients, and checking the spice level of the food. They started this business only after two years of extensive research. Their business follows the quick-service restaurants (QSR) model. He wanted street food like chole kulche to be served to customers keeping hygiene in mind. 

The basic Achaari kulcha, Aloo kulcha, or Matar kulcha plate starts from Rs. 59. The exceptional dishes like a regular plate of Bhuna Mutton Keema, Chicken Chaudhary ranges to Rs. 249. To appeal to the youngsters, they started new dishes like Kooleza (Pizza kulcha), Sandwich kulcha, and Vada kulcha. Before the pandemic, they were attending on an average of 100 customers a day. Their outlet was open 24x7, but, following the COVI-19 guidelines, they are functioning from 7 am to 9 pm. Considering the coronavirus, they have given utmost priority to food safety, among other things. 

Gaurav Bahl was planning to open ten outlets in various parts of Delhi before the COVID-19 pandemic hit and, they have changed their priorities now. They witnessed massive profit in their first outlet. The profits went from Rs. 2 lakh per month to around Rs. 7 lakh a month.
